My first try at pesto.
1 cup spinach, 2.5-ish tbs. toasted pine nuts (pine nuts + non-stick pan, 5 minutes over medium heat), 3 second squirt of lemon juice from the bottle (since I never have lemons hanging around), + about 1 tbs.-ish of water... all in food processor. pulse while adding a tbs of olive oil. stir in as much mozzarella cheese as you want. Mix with pasta & chicken, and congratulate yourself on making some amazing pesto! It's nothing impressive or inovative, but I've never made pesto before and I can't believe how easy it was. yum.

So I went 45 minutes into the gorge...and, hello sun. 
I NEEDED the sun. And I didn't even know it. 

I even went on a little hike before I headed back to my house where I worked on my quilt for a few hours. My goal is to finish it before the end of the month, I am dedicated! :)

& I bought myself flowers. Valentines day week depression for a single girl, I think not. As Oscar Wilde said "to love oneself is the begining  of  a life long romance." I love myself. Me + me = love

Beautiful Friday weather, dinner with my two favorite SpEd teachers at the Lodge, hanging with my parents after.... I love my life.

Oh, and here is the highlight of my week... I bought tickets to Sasquatch!!!! (thank god I did it pre-sale, because it sold out in 90 minutes when it went on sale Saturday!)
Can't wait!!!!!!!!!!

^fancy smancy, night seeing The Moth, with Lauren. I was really sick, but I made myself go since the tickets were my Christmas present, & Lauren had to buy them back in October. It was amazing.

Superbowl Sunday is one of my favorite days to ski. Because most people are watching the game/or half time show/whatever you do on superbowl sunday (I don't even know who is playing), that means the mountain is blessedly empty. It's amazing.  I only wish most of America would be glued to their TV's more then once a year, like clockwork, so there would be more ski days like this. 
^Elaine stayed on the bunny hill practicing her snowboarding... John helped her, too, in the afternoon. (so nice)


^ I skied with Lauren most of the day, while my Dad & John went together
^my Dad's old skis... I would laugh but he's still amazing so I guess the skis don't matter

Amazing weather, Friday + finally a reunion with my 2 favorite first year SpEd teachers. Can only be made better by the fact that the weather made it totally acceptable to wear sandals. It was perfect. 
^^ note the fact that you can add peanut butter + pickles to a hamburger!! I don't know if I am disgusted, or mad that I didn't try it myself.
